White that screams Volcano

Sonia took over old farmers’ vineyards in Maletto, on Etna, about 1,000 metres above sea level. Jungimmune Bianco is Grecanico Dorato with 5 or 6 hours of skin contact. Tiny production, no chemicals apart from sulphur dioxide, and a wine that really does feel like the volcano is nearby.

It is salty, rocky and very Etna. Open it with fish antipasti, pasta or porcini mushrooms. The wine has enough edge for seafood and enough depth for something more earthy.
