Salvatore Marino, known as Turi, makes this Catarratto in southeastern Sicilia. He knows chemistry very well and chooses to make wine without chemicals. The grape is native to the island and widely planted there, and 5 days on the skins give the wine more grip while keeping it fresh.
 
Catarratto has thick skins, so it can handle rich food better than many whites. Expect citrus on the nose and a palate with enough bite for succulent dishes.
