Carso in Friuli Venezia Giulia is hard country, with vines growing straight into rock. Paolo Vodopivec works with Vitovska, the local white grape, and Origine spends 15 days on the skins. It is often put in the orange wine box, but this is not about colour or fashion. It is about Carso. Rock in the glass.
