Carso in Friuli Venezia Giulia is hard country, with vines growing straight into rock. Paolo Vodopivec works with Vitovska, the local white grape, and Origine spends 15 days on the skins. It is often put in the orange wine box, but this is not about colour or fashion. It is about Carso. Rock in the glass.
 
Salty, mineral and made for a slow moment. The original note says special treat, and that feels right. Open it when the food is serious and the table is paying attention.

Our first little one has arrived, and we're over the moon!
