Santa Ildegarda

Santa Ildegarda starts with Nero d'Avola from the Valdibella cooperative in Camporeale, Sicilia. The grapes are handpicked in the second week of September, then Enoliti Botanici turns the wine into something botanical with rhubarb root, cinchona bark, star anise, boldo leaves, sweet orange peel, walnut leaves, and vanilla.

The original note says it clearly: digestive. Open it after a meal, not as a normal dinner red. It belongs at the end of the table, when everyone is still talking.
