Solfare

Giuseppe Cipolla works inland in the Valle dei Platani, in the province of Agrigento. The land is chalky, the nights are cooler than people expect in Sicilia, and Solfare is the only white wine of the winery. It is not a beach white. You can feel the rock.
 
Medium-bodied, very salty, with a light aromatic lift from a small percentage of Zibibbo. Open it with white meat or flavourful fish. It wants food with some substance.
