Vitovska

Carso in Friuli Venezia Giulia is the home ground of Vitovska, and Paolo Vodopivec is one of the people who has given this grape its full dignity. The vines grow in rocky land, and this wine spends 6 months on the skins. It is an orange wine by category, but it does not behave like the loud versions people expect.
 
Salty, precise and light in alcohol, with a finish that stays around because the wine has something to say. Open it with serious dishes, not because it is difficult, but because it deserves food with the same focus.
