Rosato, but not as you know it
Giuseppe Cipolla works in the Valle dei Platani, inland in the province of Agrigento, where chalky soils and cool nights shape the wines. Occhio di Sale is technically rosato, but with a deeper, more serious colour and a blend of Nero d’Avola, Inzolia and Nerello Mascalese. It is not the pale pool bottle.
Fish dishes are a good start, but this rosato can go further. Thanks to the red grapes, it also works with more structured plates. Think seafood, grilled vegetables or something with a bit of sauce.
Our first little one has arrived, and we're over the moon!
