I'm (Marko) not a cook, and I don't even like cooking that much. But I really like eating.
I'm not going to get too technical because I'm not an expert, but I do know a few things about the difference between Roman pizza and Neapolitan pizza. The dough is different: Neapolitan pizza usually has a higher hydration, while Roman pizza is less hydrated. The shaping is different, too. Roman pizza is often rolled out with a rolling pin, while Neapolitan is stretched by hand.
But for most ordinary people, the real difference is much simpler: Neapolitan pizza has that big, airy crust, while Roman pizza has a thin crust, little to no cornicione, and that crispy "scrocchiarella" texture.
So, what team am I on? Roman pizza all the way.
The problem is that finding a real Roman pizza isn't that easy. Everywhere you go, it feels like we're completely invaded by Neapolitan pizza nowadays. 😂
